Filet of White Fish (your choice) Quinoa, Carrots & Snow Peas, By Coach Pam
Ingredients
2 cups water or chicken broth
1 cup Qunioa
1 cup fresh chopped and peeled carrots
1 lb white fish (cod, hake, schrod, haddock, etc.)
At least a one-cup of fresh snow peas
Instructions
Boil the broth or water, in a 2" deep skillet
Add the Quinoa and turn down the heat
When the Quinoa starts to thicken (a few minutes), add the carrots
When the Quinoa is almost cooked (with a little liquid left), add the fish on top, sprinkle with dill and lemon pepper;
Add the snow peas at the same time
Cover the pan and simmer for 3-5 minutes. When the fish is flaky and opaque, it's ready to eat.
